Baking | Basic Cupcake Recipe
I love baking and cupcakes are my favourite things to make. The first part of this recipe is how to make a basic 12 Cupcake recipe and the next part will be showing you the recipe for basic butter cream.
I swear by this cupcake recipe and i use it every time. These cupcakes taste so good and they come out so delicious and yummy you cannot possibly have just one.
100g softened, unsalted butter
100g caster sugar
2 medium sized eggs
100g self raising flour
1tsp baking powder
1tsp vanilla essence
Begin by preparing everything; wash your hands, preheat the oven to Gas Mark 4 and line a 12 hole cupcake tray with cupcake cases.
Weigh out the butter and cut into cubes. Add this to a large mixing bowl and with a wooden spoon beat the butter so it is easier to work with.
Add the caster sugar and beat together with a wooden spoon until fully combined and the mixture is light and fluffy.
For this step, add one of the eggs into the bowl. Be careful not to get any shell in there because it is so fiddly to try and remove it. Use the wooden spoon again to fully combine the egg with the butter and sugar mixture.
Add the second egg and keep beating until the mixture is a bit runny. Make sure all the other ingredients are off of the spoon.
I use a whisk to make sure all the lumps are out of the mixture.
Sift in the self raising flour, baking powder and vanilla essence and use a metal spoon to fold this in. To fold it, basically run the spoon around the bottom of the bowl. It is like mixing but it is much slower and the circular motions to mix it are wider.
When all the dry ingredients are combined the mixture will be much stiffer and more cupcake mixture like.
Fill in the cupcake cases with equal amounts of batter and put the tray into the oven for 15-20 minutes. After 15 minutes in the oven, remove the tray and use a cocktail stick to test the cupcakes. Insert the stick in in the middle of the cake and remove it. If the stick comes out clean, the cupcakes are completely cooked. If it doesn't come out clean, put the tray back in the oven for a bit longer. Check them every 5 minutes past the 15 minute mark.
When the cupcakes are completely cooked, immediately transfer them to a wire cooling rack. If you have any pets or kids that you do not want getting hold of these cakes, put them out of reach. I have a Dalmatian who likes to steal food wherever and whenever he can so I put these cupcakes well out of his reach.
